Elberta is a tiny farming town on Utah Lake's western shore, about 45 miles south of Salt Lake City via I-15 and State Route 68. Take the Santaquin exit and head west through agricultural land to reach this community of 170 people. The town sits at 4,500 feet elevation with hot summers and mild winters. Originally named for the Elberta peach variety, the area was once covered in fruit orchards that defined the local economy.
