Amboy is a small farming town in south-central Minnesota, about 15 miles south of Mankato via Highway 169. The area features rolling prairie dotted with corn and soybean fields, with the Maple River running nearby. Highway 30 connects it east-west to other rural communities. The town's annual Corn Days festival serves over 1,000 ears of sweet corn in one evening, celebrating the local harvest.
